Currently I have various accounts on Facebook and Instagram to cover a few of my main activities and I feel that a unified blog would work better for me. I'm still keeping those accounts, but I like being able to have everything in one place. I hope you'll agree!
My interests and passions are wide and varied so you'll see posts here on everything from cooking, recipes, restaurant reviews, knitting and fiber arts, writing novels, race walking, traveling, gardening and even gushing over TV shows. And while I'm pretty active politically in my personal life, that is one aspect that I really won't be sharing here. I have other social media accounts to indulge in politics and I'd rather keep those opinions there. This blog is for all the other stuff in my life that I enjoy and want to share with you. Quick Panang Curry

 Sometimes a meal takes hours of your day, but some days you just don’t have hours to invest! Today’s Quick Panang came together with frozen stir-fry veggies (with no sauce), a pound of cooked and peeled shrimp, a few tablespoons of red curry paste and a can of coconut milk. Sauté the frozen veggies in a bit of canola and sesame oil for a minute or so, lower heat and cover for 3-4 minutes for veggies to completely thaw and steam a bit. Meanwhile, mix the curry paste and about 1/3 of the coconut milk in a small bowl until we’ll blended. Add this to veggies in the pan and then add in the remaining coconut milk. Mix well so all the veggies are coated. Last add in the shrimp and heat through on low heat for about 2-3 minutes. Serve over rice or noodles. The whole meal took me less than 10 minutes from start to finish. Add in other veggies to your liking such as mini corns or water chestnuts. Also, try any protein you like! Chili

Homemade venison Chili! Here's the basic recipe I've developed however I often change up various ingredients: sometimes I use beef or elk, or even Beyond Meat or Impossible Meat or no meat at all for a vegan version. I use whatever beans I have on hand. Yesterday I used kidney and black beans because I forgot to soak the dry pinto beans overnight. I also added 4 Hershey Bars from our leftover Halloween candy stash, and you can see in the photo, a rind from a block of gruyere cheese from several months ago. I save those in my freezer to add extra decadence to sauces, chili, homemade stock and even casseroles. I'll be sharing thrifty tips like that in posts for all of you too!
